Tracing the cultural soul of Bengal through its most beloved culinary tradition, Ahiritola Sarbojanin Durgotsab Samity presents its 2026 theme, "Madhuri Moitrir Aneswane" (In Search of Sweetness and Camaraderie). Designed by pandal architect Manas Das, with Pratim Sengupta as President and Debashis Dutta as Secretary, the pandal celebrates how the history of Bengal’s confectionery is inextricably linked to the story of its people, creativity, and shared social fabric.

From Jaggery to Iconic Confections The installation chronicles the evolution of Bengali sweets—from early rustic delicacies crafted with jaggery, rice, coconut, and kheer to legendary creations like Sandesh, Rosogolla, Pantua, and Chomchom. The theme emphasizes that sweet shops in Bengal are far more than commercial storefronts; they are cultural institutions where communities gather to celebrate weddings, pujas, New Year festivities, and everyday joys, uniting people across religion, caste, and social barriers.

Fading Signatures and Legendary Pioneers Stepping into the pandal feels like walking through the historic lanes of North Kolkata. The installation revives a classic, slowly vanishing hallmark of traditional North Kolkata sweet shops: the towering, framed portraits of Goddess Kali that once stood prominently inside every major confectionery. The pandal pays homage to the titans of Bengal's sweet industry—including stalwarts like Nobin Chandra Das, Keshab Chandra Das (K.C. Das), Ganguram, and putiram and so on—while showcasing the intricate terracotta, stone, and wooden moulds (chhanch) historically used by artisans to press delicate patterns into Sandesh.

Milk Cans, Canning Revolutions, and the Science of the 'Matir Bhar' A standout section of the pandal honors the father of the Rosogolla, Nobin Chandra Das, and his visionary son, Keshab Chandra Das. Beneath the stall installation dedicated to Nobin Chandra Das sits an array of traditional metal milk cans—a nod to both the massive daily supply of fresh milk required to curdle the finest chhana(cottage cheese) and the groundbreaking technological leap introduced by K.C. Das in the 1930s: the vacuum-sealed canning of Rosogolla, which allowed Bengal's signature sweet to travel across oceans for the first time.

Nearby, the pandal highlights the humble matir bhar and haari (earthen pots) used to serve and pack sweets. Adopted historically for their ritualistic purity as single-use, eco-friendly vessels, these porous clay pots also served as natural refrigerators—allowing micro-evaporation that kept chhana and sugar syrup cool and fresh in Bengal's humid climate. As visitors move toward the exit, the visual timeline transitions from these earthy clay vessels to modern paper and cardboard boxes, flanked by reproductions of vintage, hand-drawn sweet advertisements from historic periodicals like Sandesh and Amrita Bazar Patrika.

Bonedi Bari Grandeur and the Sweetest Bond The matri mandap anchors this cultural narrative in the architectural elegance of a traditional aristocratic Bonedi Bari, featuring a classic Ghotok-mukhi Singha (horse-faced lion) beside Goddess Durga. In a deeply endearing artistic masterstroke, Lord Ganesha is sculpted resting directly in the palm of Goddess Durga's hand. Through this unique iconography, artist Manas Das equates Ganesha—who shares the closest, most affectionate bond with his mother—to the ultimate symbol of mishti (sweetness) held tenderly in the Mother's hand.
